Like so many people, for years I thought that rhubarb was just for dessert. I made rhubarb pie, rhubarb cake, and rhubarb crisp. But that’s a lot of sugar! And when you have several rhubarb plants in the garden, you realize that you really should not be eating that much dessert day after day!
When we visited Alaska a few years ago, I was surprised to discover that they were famous for their rhubarb, and I purchased a rhubarb cookbook. When I came home, we started making all sorts of dishes and drinks from rhubarb soup to rhubarb mojitos! In fact, this is one of the things I often get when eating in a restaurant because I want to see what kind of special spin each chef gives to something that can be pretty boring.
