Chinese Spice Slow-Cooked Pork
This is my favorite pork shoulder roast recipe! It's quick to prepare and cooks while you're busy doing something else.

- 1 1/2 to 2 pounds pork shoulder roast pastured and/or organic
- Sea salt to taste
- ground black pepper to taste
- 2 yellow onions sliced
- 1/2 cup coconut aminos
- 3 cloves garlic minced
- 2 teaspoons fresh ginger root grated
- 4 to 5 teaspoons Chinese 5 Spice
- 1 pound collard greens chopped
Slice the onions and place half of them into the bottom of the slow cooker. Add the roast on top of the onions, salt and pepper the roast, and then add the rest of the onions on top of the roast.
You can substitute 1/4 cup soy sauce for the coconut aminos, and if you do, do not add any additional salt.
In a small bowl, combine the rest of the ingredients except for the collard greens.
Cook the roast for 4 hours on high or 6 hours on low in your slow cooker. Basically, keep cooking until you can pull the roast apart with a fork. Then pull apart all of the meat, and remove the bone, if there is one.
After the roast is done, add the collard greens and cook until done.
