  1. Mix together all ingredients in a medium sized bowl.
  2. Heat lard in a cast iron skillet.
  3. When oil is hot, add batter by heaping tablespoons and flatten slightly.
  4. When you see edges start to brown, flip over, being careful not to splatter the grease on yourself. I usually tip the pan so that the grease flows to the other side when I’m flipping them. They are usually cooked through after about five minutes on each side.
